Grain-free Tabouli (Tabbouleh)

Happy Sunday! I don't know about you. But I love Tabouli. Must be my Mediterranean roots. Tabouli is a refreshing garnish, topping, and delicious to eat alone. You can even add it to salads, your favorite grain such as quinoa and brown rice, and toppers for your favorite poultry, meats, and seafood. Some recipes call for tomatoes, red peppers, cucumbers, and even a dash of balsamic vinegar or crushed red pepper. What's nice about this stripped down version of Tabouli is you can add extra veggies to it too or eat it as the recipe calls for it. The flavor will have your tastebuds dancing. Plus parsley is packed with nutrients that are high in antioxants and aids in digestion. 6 easy ingredients! It's a total win!!!

Ingredients:

(Serves 4) - 4 cups of fresh, chopped curly parsley - 1 lemon, cut & squeezed (remove the seeds) - 2 cloves of garlic, pressed

- 3/4 on a red onion, diced - a few dashes of Himalayan pink

- a few dashed of Bragg's 24 herbs & spices Directions: 1) In a large mixing bowl, add the chopped parsley, fresh squeezed lemon, diced red onion, pressed garlic, Himalayan pink salt, and Bragg's 24 herbs & spices seasoning. 2) Mix together and chill in the fridge for about 2 hours or immediately serve.

(Either is ok based on preference.) 3) Toss together, serve into small salad bowls, or add to a salad or use as a garnish. Enjoy!
