Unstuffed pepper soup w/cauliflower
Happy Sunday! 🙋🏻Woke up with a migraine & listened to my body to catch some extra Zzzz's. Thankfully, it subsided but not feeling 💯. Well it's a new month, new start. Food prep done and on my last grocery run picked up everything I needed to make a Fall, household favorite crockpot soup. It will be ready for dinner. 👩🏻🍳👌🏼Enjoy the rest of your day! 💋
Ingredients: 🔅1 - 1.5 lbs of ground chicken, turkey, or extra lean grassfed beef (I used ground turkey in this batch.)
🔅3 cloves of fresh garlic, crushed 🔅1 cup of a chopped, sweet onion or a red onion (about 1/2 an onion) 🔅 1 head of cauliflower, chopped small
🔅3-4 peppers, chopped (any color, I used 1 mild cubanelle, 1 red pepper, 1 green pepper, & 1 orange pepper)
🔅28 oz can of organic stewed tomatoes, (I slice the tomatoes up & throw it all in the crockpot with the sauce from the can
🔅A whole jar of Mama Jess's garden pasta sauce (all natural, gluten free, no sugar added sauce. It's great!) 🔅2 cups of veggie, beef, or chicken broth (I used vegetable broth.) 🔅Season with Bragg's 24 herbs & spices seasoning, M&B's Organic granulated garlic & parsley, M&B's Italian seasoning, Wow-a-chihuahua seasoning, grind in some Himalayan pink salt & black pepper (all seasoning to taste. At least, 1 tablespoon of each in the crockpot.)
Directions: 1) In a skillet on medium heat, melt some coconut oil and add the garlic and onion for about a minute. Then add the ground turkey. Stir and cook until brown. Dash on Himalayan pink salt, M&B's garlic & parsley seasoning, M&B's Italian seasoning, & Wow-a-chihuahua seasoning 2) Add the ground turkey mixture to the crockpot.
3) Chop up the whole tomatoes, add to the pot including the sauce in the can.
4) Add the jar of tomato sauce.
5) Chop all the peppers & add to the crockpot.
6) Use a food processor or Vitamix to finely chop or chop the cauliflower by hand and then add to the crockpot. Any leftover cauliflower florets add to the crockpot as well minus the stems. 7) Cook on low for 6-8 hours or on high for 4-5.
8) Dish out into soup bowls and add fresh grated Romano. 👌🏼🇮🇹
