Pan seared chicken breasts finished in a balsamic, fresh garlic dressing w/bruschetta topped spirali

Although I have been feeling rundown the last few days, I could not let groceries go to waste. This dish is even better as leftovers served cold by itself or even over fresh spinach. Now praying some home remedies work to feel better. Sweet dreams ✌🏼❤️

Ingredients:

(I use organics whenever possible.)

*about 1 Tbsp. of EVOO, per skillet

*2 large zucchini, spiralized or you can buy pre-packaged store bought

*2-3 boneless, skinless chicken breasts or you can use thighs

*BelGioioso Romano cheese, enough to garnish

Balsamic, garlic dressing ingredients for the chicken:

*2 cloves of fresh garlic, pressed

*2 Tbsp. of EVOO

*1 Tbsp. of balsamic vinegar

*1 Tbsp. of M&B spice garlic & parsley seasoning

*a few dashes of Himalayan pink salt & black pepper

(Mix all together in a medium bowl)

Bruschetta topping ingredients:

*3 vine ripe or Roma tomatoes, chopped

*1/2 cup of red onion, chopped

*2 cloves of fresh garlic, pressed

*2 Tbsp. of fresh basil, chopped

*2 Tbsp. of EVOO or avocado oil

*1 1/2 Tbsp. of balsamic vinegar

*1 Tbsp. of M&B Spices garlic & parsley seasoning

*Himalayan pink salt & black pepper to taste

Directions for the bruschetta topping:

1) Add all bruschetta topping veggies in a large bowl.

2) Mix with the above ingredients.

3) Set aside for later.

Directions for the chicken:

1) In a small skillet over medium heat, add about 1 Tbsp. of EVOO.

2) Pan sear the chicken for about 2-3 minutes on both sides.

3) Dip the chicken on both sides in the balsamic, garlic dressing

4) Place back in the skillet for another 2-3 minutes until lightly brown on both sides.

5) Then set aside, cover with a lid over warm heat.

Directions for the zucchini:

1) In a large skillet over medium heat, add about 1 Tbsp. of EVOO, add in the spiralized zucchini

2) Stir and cook for about 5-6 minutes.

3) Then in a large serving dish, add the zucchini and evenly distribute.

4) Add the bruschetta topping and the chicken.

5) Top with a sprinkle with Romano and garnish with fresh basil.

6) Serve and enjoy!
