Sautéed & seasoned veggies, garbanzos and lentils paired with pan seared turkey burgers


Happy hump day! 🙋🏻After a busy work day, fighting traffic, & a grocery run, a low maintenance meal was made. 👩🏻‍🍳👌🏼I used the same pan twice. 😉 Leftover veggies too. The kitchen is cleaned up & ready to chill.

Ingredients:

*organic, unrefined coconut oil to cook with

*2 zucchini, (cut the zucchini in four)

*2 red bell pepper, julienne sliced

*1/2 of a sweet onion, chopped

*2 cups of kale, chopped

*Himalayan pink salt

*Wow-a-chihuahua seasoning

*M&B's Organic Garlic & Parsley seasoning

*Bragg's 24 Herbs & Spices seasoning

*1 package of Plainville organic turkey burgers (4 in a package)

*1 package of Path of Life Garbanzos & Lentils

*BelGioioso Romano grated cheese to sprinkle over finished veggies

Directions for the sautéed veggies :

1) Chop all the veggies.

2) In a large skillet on medium heat, add about a tablespoon of coconut oil.

3) Add all veggies except for the kale.

4) Dash on Himalayan pink salt, M&B's Organic Garlic & Parsley seasoning,

& Bragg's 24 Herbs & Spices seasoning

5) Continue to flip the veggies and sauté until tender.

6) Add the kale and stir into the veggies for about a minute.

7) Set aside and place the veggies on a plate.

8) Start working on the turkey burgers.

Directions for pan seared turkey burgers:

1) In the same large skillet on medium heat, add about a tablespoon of coconut oil.

2) Add the turkey burgers and season with a few turns of Himalayan pink salt a few dashes of Wow-a-chihuahua seasoning,

3) Pan sear for about 5-6 minutes on each side. (The outside should be evenly brown and inside fully cooked.)

4) Remove from heat and set aside.

Directions for Path of Life Garbanzo Beans & Lentils:

1)In a small skillet over medium heat, add about 2 Tbsp. of water, add in the Path of Life frozen quinoa, stir and cook for about 5-6 minutes.

***On a large platter, arrange the kale, red peppers, zucchini, onions, garbanzo beans and lentils. Garnish with romano. Place the turkey burgers on top of the veggies*** Serve warm and Enjoy!
