Cauliflower "potato" salad
While food prepping this Sunday, I wanted to make a side dish to go with lunch. Cauliflower has so many healthy alternatives to making most grain free meals and side dishes. I actually love this much more than traditional potato salad. Definitely, a summer favorite. But great anytime. 👌🏼😋Have a relaxing evening! 😘
Cauliflower "Potato" Salad 👌🏼😋 ✨Inspired by: Goodful Ingredients: *a head of cauliflower, chopped
*3/4 cup of celery, diced
*3/4 cup of red onion, diced
*3 hard boiled eggs, diced *Himalayan pink salt, M&B's garlic and parsley seasoning & black pepper about 1 Tbsp. each *2 Tbsp. of organic butter, melted
****For the dressing: *a 6 oz. container of Greek yogurt
*1 Tbsp. of Dijon mustard
*1 Tbsp. of raw honey
*2 cloves of fresh garlic, pressed *2 Tbsp. of fresh dill, chopped
*1 Tbsp. of avocado oil or EVOO *1/2 of a fresh lemon, squeezed
Directions: 1) Preheat oven to 400 degrees. 2) Foil a baking sheet 3) In a large bowl, mix chopped cauliflower, melted butter, Himalayan pink salt, M&B's garlic and parsley seasoning & black pepper 4) Evenly distribute on the baking sheet & bake for 25 minutes. 5) While baking, make the dressing & place in the fridge. 6) Then in a separate bowl chop up the celery, red onion, & eggs & place in the fridge. 7) After 25 minutes, remove the cauliflower from the oven and let cool. 8) In a large bowl, add the roasted cauliflower, celery, red onion, eggs, and dressing. 9) Serve & Enjoy! It's delicious!
