Grilled Japanese sweet potato slices

Japanese sweet potatoes on the grill....I'm down! 😂🙌🏼😋Food prep Sunday. Back on track...Grilling is such an easy way to plan ahead for clean eating. Although, I wish I was at the 🌊 beach. 😁

Ingredients:

*2 Japanese sweet potatoes, washed & sliced

*ground cinnamon

*Himalayan pink salt

*1/4 cup of organic, unrefined coconut oil/ melted

*foil, the length of a standard baking sheet

Directions:

1) Preheat the grill to medium heat.

2) Wash and slice potatoes.

3) Melt the coconut oil.

4) In a large bowl, add the potatoes, pour in the coconut oil & dash on some Himalayan pink salt, and toss together.

5) Place foil over a baking sheet and arrange the potatoes.

6) Shake on some ground cinnamon and transfer the foil to the grill without the baking sheet.

7) Cook each side for about 5 minutes. The ends will be a little crispy and the inside will be tender.
