Paleo Banana Apple Cinnamon muffins

Along with food prepping today, I made some Paleo on the go muffins - Banana Apple Cinnamon. 🍌🍏For the most part, I followed the recipe on the back of the bag. But I used one less egg than it called for & a little more water. It came out just right. 👌🏼👩🏻🍳
Ingredients:
*3 3/4 cups of Paleo Bob's Red Mill Baking Flour
*1 tsp. of baking soda
*1/2 tsp. of salt (I used Himalayan pink salt)
*3 eggs (I only used 2 eggs)
*3/4 cup of organic, unrefined coconut oil, melted
*3/4 cup of raw honey or pure maple syrup (I used raw honey)
*1/3 cup of water (I used 2/3 cup of water)
Optional ingredients I used:
*I added 2 bananas, mashed
*1 green apple, peeled, chopped small
*1 1/2 Tbsp. of ground cinnamon
*1 1/2 Tbsp. of pure vanilla extract
*1/2 tsp. more of Himalayan pink salt
Directions:
1) Preheat oven to 350 degrees.
2) Line 12 muffin liners in a muffin pan.
3) In a large bowl, combine the Paleo flour, baking soda, and salt.
4) In a separate large bowl, add the eggs, coconut oil, honey or maple syrup, water, and optional ingredients minus the apples.
5) Add the flour mixture in and mix with the egg mixture.
6) Fold in the apples and mix thoroughly.
7) Spoon the batter into the muffin liners.
8) Sprinkle on a litter extra cinnamon before baking.
9) Bake for about 20-25 minutes. (They are done when the center of a toothpick comes out clean and the tops should have a golden color.)
10) Let them cool for about 5 minutes before serving.
11) Place in the fridge for freshen. Enjoy!
Makes 12 large muffins. (You could also stretch the batter to make more, even minis if so desired.)
