Roasted garlic & chives potatoes, balsamic lemon asparagus w/ toasted almonds, & pan seared

All this rain today calls for a home cooked comfort meal. šŸ‘©šŸ»ā€šŸ³Roasted garlic & chives potatoes, Roasted balsamic lemon asparagus with toasted almonds, and pan seared grass fed strip steak finished off in the oven.šŸ‘ŒšŸ¼šŸ˜Delicious! Perfect for two with leftover veggies šŸ˜‹

Ingredients:

*1/2 cup of avocado oil

*1.5 lb. of Melissa's Baby Dutch yellow potatoes

*2 cloves of fresh garlic, pressed

*about 2 Tbsp. of fresh chives, diced

*1 bunch of asparagus, washed and trim the stems

*1/2 a fresh lemon, squeezed

*1/4 cup of balsamic vinegar

*1/3 cup of sliced almonds

*2 organic, grass fed strip steaks

*M&B's Organic garlic & parsley seasoning

*Himalayan pink salt

*Wow-a-chihuahua seasoning

*Bragg's 24 Herbs & Spices seasoning

Directions for the roasted potatoes and asparagus:

1) Preheat oven to 400 degrees.

2) Cover a baking sheet with foil.

3) Cut the bag and wash the potatoes

4) In the large Pyrex bowl, mix the potatoes with 1/4 cup of avocado oil, pressed garlic, diced chives, a few dashes of M&B's Organic garlic & parsley seasoning, Bragg's 24 Herbs & Spices seasoning, and Himalayan pink salt

5) Toss and evening coat the potatoes.

6) Arrange on the baking sheet

7) Next wash the asparagus and trim off the ends

8) Reuse the large Pyrex bowl and add the asparagus.

9) Mix the asparagus with 1/4 cup of avocado oil, 1/2 a fresh lemon squeezed, 1/4 cup of balsamic vinegar, a few dashes of M&B's Organic garlic & parsley seasoning, and Himalayan pink salt.

10) Arrange the asparagus on the same baking sheet.

11) With the remaining vinegar mixture, add the sliced almonds & toss together.

12) Then add over the asparagus on the baking sheet.

13) Roast in the oven for about 45 minutes or until tender

14) Gently flip with tongs so each side cooks evenly.

Directions for the pan seared strip steak:

1) In a medium skillet on medium heat, add about a tablespoon of avocado oil.

2) Season both sides of the steaks with a few turns of Himalayan pink salt, a dash of M&B's garlic and parsley seasoning, and Wow-a-chihuahua seasoning.

3) Pan sear for about 5-6 minutes on each side. (The outside should be evenly brown and inside fully cooked.)

4) Place the skillet in the oven for about 2 minutes. (Make sure the skillet is oven safe.)

5) Remove and let it rest.

Once everything is finished, I add it all to a large platter for presentation. Serve & Enjoy!
