Sautéed ground chicken & spiralized beets over salad greens

Errands and an appointment after work coming in the door thinking 💁🏻what to make quickly for dinner. 🍴 So....I started sautéing some ground chicken in one skillet and sautéing spiralized beets in another. Make a garlic lemon balsamic vinaigrette dressing and toss it in an spinach arugula salad with some veggies and top with BelGioioso four blend cheese. I like to serve most meals on a platter. Then for tonight's serve in large salad bowls. Meals don't have to be complicated. Aim for color and flavor and you'll hit your mark. 👌🏼👩🏻‍🍳🇮🇹

Ingredients:

(I like to use organic products as much as possible.)

*organic, unrefined coconut oil

*1 pkg of ground chicken (about 1 lb.)

*Himalayan pink salt

*Wow-a-chihuahua seasoning

*M&B's Organic Garlic & Parsley seasoning

*about 2 cups of spiralized beets

*1 1/2 cups of baby spinach

*1 1/2 cups of arugula

*1/2 of a large cucumber, chopped

*1 cup of cherry tomatoes

*3/4 cup of sliced, baby portobella mushrooms

*1-2 cloves of garlic, pressed

*1/2 a large, fresh lemon, squeezed (remove seeds)

*3/4 cup of EVOO

*1/4 cup of Balsamic Vinegar

*Bragg's 24 Herbs & Spices seasoning

*BelGioioso shredded four cheese blend (about 1/4 cup)

Directions for the sautéed ground chicken:

1) In the same medium skillet on medium heat, add about a tablespoon of coconut oil.

2) Add the chicken and season with a few turns of Himalayan pink salt, a few dashes of Wow-a-chihuahua seasoning, and M&B's Organic Garlic & Parsley seasoning

3) Sauté the beef until lightly brown on both sides.

4) Then set aside over warm heat.

Directions for sautéed spiralized beets:

1) First in a large skillet in about a 1 1/2 tablespoons of coconut oil, sauté the spiralized beets.

2) Cook until tender about 5 minutes. Toss occasionally to evenly cook.

3) Then allow the beets to cool.

4) On a platter, arrange the ground chicken and place the cooled beets in the center.

5) In a separate bowl, create a dressing with about 3/4 cup of EVOO, 1/4 cup of balsamic vinegar, 1-2 cloves of fresh pressed garlic, 1/2 a fresh lemon squeezed, & a few dashes of Himalayan pink salt, and sprinkle of Bragg's 24 Herbs & Spices seasoning .

6) Toss with the veggies, spinach, & arugula.

7) Then position all the mixed greens on the platter.

8) Add the cheese and serve.
