Spiralized sweet potato hash skillet


Lately my mind feels miles away from home, I think it already left for my upcoming vacation. I haven't had an appetite either. Stress & adversity can be like that sometimes. But I made an easy meal tonight in one skillet and added hard boiled eggs. What is it?! ❇️Spiralized sweet potato hash with sautéed veggies in coconut oil & seasoned❇️

Ingredients:

*1 1/2 Tbsp. of organic, unrefined coconut oil

*about 2 cups of spiralized sweet potatoes

*about 3 large portobella mushrooms, sliced

*3/4 cup of cherry tomatoes

*1/4 cup of sweet onions, chopped

*1 1/2 cup arugula

*1 1/2 cup of kale, chopped

*2 basil leaves, chopped

*3 hard boiled eggs, sliced lengthwise

*Wow-a-chihuahua seasoning

*M&B's Organic garlic & parsley seasoning

*Himalayan pink salt

*ground black pepper

Directions:

1) In a large skillet over medium heat, add the coconut oil.

2) Then add in the spiralized sweet potatoes.

3) Add the sweet onions, mushrooms, and cherry tomatoes and toss with potatoes.

4) Dash on Himalayan pink salt, M&B Spices organic garlic & parsley seasoning, and Wow-a-chihuahua seasoning.

5) Add in the arugula and basil and stir.

6) Add the chopped kale and continue stirring.

7) Sauté until tender.

8) Remove from heat and set aside.

9) Slice the hard boiled eggs, place on top of the mixture in the skillet & dash on some black pepper.

10) Serve into bowls and enjoy!
