Mediterranean style chicken stir fry w/cauliflower "rice", veggies, & lentils


The start of a new schedule change in my household promotes even more meal planning if that's even possible. 😂 I'm a planner on the regular especially when it comes to making meals. It's in my make up and being organized gives me inner peace. 🙏🏼😊All in all, I just purchase my favorites and most of the time pull items from the fridge and make some magic. Bam! 💥👩🏻‍🍳👌🏼This here is what I'll call 📣❇️Mediterranean style chicken cauliflower "rice" lentil veggie stir fry ❇️ I love lots of veggies, flavor, and color. Delish! 😍And there will be leftovers !🙌🏼

Ingredients:

*avocado oil to cook with

*1 baby eggplant, cubed

*1 red bell pepper, julienne sliced

*1/4 cup of red onion, chopped

*2 green onion stalks, diced

*Himalayan pink salt

*1 package of chicken (I used stir fry chicken that's already sliced lengthwise.)

*Wow-a-chihuahua seasoning

*M&B's Organic Garlic & Parsley seasoning

*Bragg's 24 Herbs & Spices seasoning

*about 1 1/2 cups of cauliflower "rice"

*1 package of Path of Life Garbanzos & Lentils

*1 fresh lemon

*fresh cilantro to garnish with

*about 2 Tbsp. of balsamic vinegar

Directions:

1) Chop all the veggies.

2) In a medium skillet on medium heat, add about a tablespoon of avocado oil and add the cubed eggplant.

3) Dash on Himalayan pink salt

4) Add the sliced red peppers, red onion, and green onion.

5) Add another tablespoon of avocado oil.

6) Continue to flip the veggies and sauté until tender.

7) Set aside and place the veggies on a plate.

8) Start working on the chicken.

Directions for pan seared chicken strips:

1) In the same medium skillet on medium heat, add about a tablespoon of avocado oil.

2) Add the chicken and season with a few turns of Himalayan pink salt, a few dashes of Wow-a-chihuahua seasoning, M&B's Organic Garlic & Parsley seasoning, and Bragg's 24 Herbs & Spices seasoning.

3) Pan sear for about 5-6 minutes on each side. (The outside should be evenly brown and inside fully cooked.)

4) Remove from heat and set aside.

Directions for the cauliflower "rice:

1) In the medium skillet on medium heat, add about a tablespoon of avocado oil.

2) Add the caulifower "rice".

3) Season with Himalayan pink salt & M&B's Organic Garlic & Parsley seasoning (a few dashes on each)

4) Cook until tender about 5-6 minutes.

5) Remove from the heat and set a side in a large bowl.

Directions for Path of Life Garbanzo Beans & Lentils:

1)In a small skillet over medium heat, add about 2 Tbsp. of water, add in the Path of Life frozen quinoa, stir and cook for about 5-6 minutes.

***On a large platter, arrange the cauliflower "rice", red peppers, eggplant, red & green onions, chicken strips, garbanzo beans and lentils. Drizzle balsamic vinegar and fresh squeezed lemon over the dish. Garnish with fresh lemon slices and cilantro.***

Serve warm and Enjoy!

Makes 4 servings.
