I love roasted veggies. Although, it may require some chopping and a little prep work. You really can't mess it up. Select someone your favorites and roasting makes for a simplified meal. Sounds good?!๐ฉโ๐ณ๐Sounds good to me! ๐๐
Note: ๐กWork on the potatoes first and get them going in the oven. Then start working on making the dressing. Next chop up the veggies needed and get them roasting. Last but not least, work on the pan seared turkey breast steaks as they cook quickly.
Ingredients for the meal:
*1 pkg. of organic, turkey breast steaks (I used Plainville Farms and it had 3 in the package.)
*organic, unrefined coconut oil
*Wow-a-chihuahua seasoning, Himalayan pink salt, and M&B garlic and parsley seasoning just a few dashes
*1 pkg. of Melissa's organic, baby Japanese yams
*1 Tbsp. of ground cinnamon
*3/4 cup of a sweet onion, chopped
*1 zucchini, sliced
*1 yellow squash, sliced
*2 Bosc pears, sliced (I leave the peel on)
Dressing ingredients: *1/3 cup of EVOO (extra virgin olive oil) *1/4 cup of pure maple syrup *2 Tbsp. of balsamic vinegar *1 Tbsp. of Dijon mustard *1 Tbsp. of Bragg's 24 herbs & spices seasoning *1 tsp. of M&B Spices organic granulated garlic & parsley seasoning *a few dashes of Himalayan pink salt -Mix dressing in a glass bowl with a fork or whisk.
Directions for the Japanese sweet potatoes:
1) Preheat oven to 450 degrees.
2) Foil a cookie sheet.
3) Wash the potatoes and pierce each of them with a knife.
3) In a glass bowl, add the washed Japanese sweet potatoes.
4) Toss in about 1/3 cup of melted coconut oil, dash on Himalayan pink salt, & ground cinnamon.
5) Bake for about 35-45 minutes until tender.
Directions for roasted veggies & pears:
1) The oven should already be at 450 degrees.
2) Foil a large baking sheet.
3) Lightly coat with melted coconut oil.
4) Arrange all the sliced veggies and pears.
5) Drizzle the prepared dressing over the veggies and pears.
6) Roast in the oven for about 20-25 minutes until tender.
Directions for pan seared turkey breast steaks:
1) In a medium skillet on medium heat, add about a tablespoon of coconut oil.
2) Add the turkey breast steaks and season with a few turns of Himalayan pink salt and a dash of M&B's garlic and parsley seasoning.
3) Pan sear for about 5-6 minutes on each side. (The outside should be evenly brown and inside fully cooked.)
4) After flipping, add a few dashes of Wow-a-chihuahua seasoning and add of few spoonfuls of the dressing made above.
5) Place the skillet in the oven for about 2 minutes. (Make sure the skillet is oven safe.)
6) Remove and let it rest.
Once everything is finished, I add it all to a large platter for presentation. Use a spoon to add any leftover dressing. Serve & Enjoy!
