Cauliflower "Potato" Salad

Ingredients: 🔅a head of cauliflower, chopped 🔅3/4 cup of celery, diced ... 🔅3/4 cup of red onion, diced 🔅3 hard boiled eggs, diced 🔅Himalayan pink salt & black pepper about 1 Tbsp. each 🔅2 Tbsp. of organic butter, melted ****For the dressing: 🔅1/2 cup of Greek yogurt 🔅1 Tbsp. of Dijon mustard 🔅1 Tbsp. of raw honey 🔅2 cloves of fresh garlic, pressed 🔅2 Tbsp. of fresh dill, chopped 🔅1 Tbsp. of EVOO 🔅1/2 of a lemon, squeezed Directions: 1) Preheat oven to 400 degrees. 2) Foil a baking sheet 3) In a large bowl, mix chopped cauliflower, melted butter, Himalayan pink salt & black pepper 4) Evenly distribute on the baking sheet & bake for 25 minutes. 5) While baking, make the dressing & place in the fridge. 6) Then in a separate bowl chop up the celery, red onion, & eggs & place in the fridge. 7) After 25 minutes, remove the cauliflower from the oven and let cool. 8) In a large bowl, add the roasted cauliflower, celery, red onion, eggs, and dressing. 9) Serve & Enjoy!
